Tomato Rice
Preparation Time: 15 minutes.
Cooking Time: 30 minutes.
Ingredients
1/2 kg tomatoes
1/2 cup coconut , grated
3 onions
1 cup rice (chawal)
salt to taste
1 tsp chilli powder
2 green chillies
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp urad dal (split black lentils)
a few curry leaves (kadi patta)
1/4 cup mint leaves (phudina)
10 tsp oil
10 soya chunks (nuggets), soaked
Method
Soak rice for 10 mts.
Blend tomatoes, coconut, mint with little water and strain.the juice should be 2 cups, add water accordingly. Heat oil in a cooker and season with mustard, urad, curryleaves, green chilli. Add oinion and saute till pinkish, add soaked chunks,soaked rice and mix. Add the tomato juice, salt chilli powder,mix well and pressure cook for 1 whistle.
