Soya Mutter Kadhi

Makes 4 servings
Ingredients
1/4 cup soya chunks (nuggets)
1/2 cup boiled green peas
1/2 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
1 tsp ginger-green chilli paste
1/2 tsp garlic (lehsun) paste
1/2 cup chopped onions
1/2 cup finely chopped tomatoes
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp coriander (dhania) powder
1 1/2 cups fresh curds (dahi)
2 tbsp besan (bengal gram flour)
3 tbsp milk
1/2 tsp sugar
2 tbsp chopped coriander (dhania)
2 tbsp oil
salt to taste
Method
Cook the soya nuggets in hot salted water for about 20 minutes. Keep aside. Heat the oil in a pan and add the cumin seeds. When they crackle, add the asafoetida, green chilli-ginger, garlic paste and onions and saute till the onions are translucent. Add the tomatoes, turmeric powder, chilli powder and coriander powder and cook on a slow flame for about 5 to 10 minutes. Meanwhile beat the curds, besan, milk and ½ cup of water till smooth and free of lumps and add to the tomato-onion mixture. Add the soya nuggets, green peas, sugar, salt and 1 cup of water and bring to a boil. Serve hot garnished with coriander.
